Following the success of Claud’s, Joshua Pinsky and Chase Sinzer naturally embarked on a new culinary venture, opening Penny, their revitalizing raw bar concept, just upstairs from Claud in the same building.

At the heart of the visual identity lies a deep admiration for Eileen Gray and her philosophy of warm modernism. A pioneer of modernist architecture and design, Gray championed a human-centric approach that balanced structure with intimacy, precision with warmth, and refinement with approachability — principles that feel especially relevant to hospitality.

At Penny, this balance takes center stage. Seafood reigns supreme here, celebrated in its purest form yet elevated with restraint and clarity. From timeless favorites like the iconic shrimp cocktail to cooked-to-order Maine lobster and the exquisite simplicity of tuna carpaccio, each dish embodies a meeting point between modern sensibility and nostalgic pleasure.
